I noticed it's incredibly easy to shoot out pilots/passengers from those helis with an assault rifle. At least for me anyway

I have not done that. I have killed a pilot out of one, the chopper landed, and then I stole the chopper. Not nearly as epic, but it make me feel great.
I am going to have to remember that next time, if the chance ever arises.
