....will the virus scan you're running, stop running, and when you bring it out of SLEEP, will it continue where it leaves off? If it does, I'm not sure if I like that.

It stops until the computer wakes up and then continues where it left off.
If you don't want it to take it off sleep while you run your scan.

it all depends on your power settings....the timer starts when there is no keyboard or mouse activity

For this reason alone I only allow my computer to sleep when I shut my laptop lid and only when on battery power.
