Appearance: I expect that's what any chicken would look like after being skinned & stewed in a pressure cooker for a few hours.
Taste: It "should" have some chicken flavor. The commentary says it doesn't. I guess their process destroys the meat on a cellular level.

Most likely the broth has all the flavor. I have seen it once before on Chopped as an ingredient. Most likely came from the time when everything needed to be canned and there wasn't much refrigeration
