View Full Version : What do you put in your stuffing/dressing.

Ok so Thanksgiving is coming up and I was curious as I just cooked my first turkey for the season yesterday.

What do you put in your stuffing/dressing. Also as the poll asks what do you call it. If your in the south it most likely will be dressing.

For the stuffing its mirepoix(carrots, celery, onions<20/20/60 ratio>), cranberries, butter, stock, apples, walnuts, cubed bread and cubed cornbread. Also I have to cook it in the bird so it gets all the full fat from the turkey.

Ps I also brine my turkey.(insert phantom joke)

cubed sourdough, butter, cremini mushrooms, celery w/ leaves, onion, fresh thyme, fresh sage, fresh italian parsley, chicken broth.

I make two versions, the above and oyster. in the oyster version I replace the mushrooms with the oysters.

I also brine my turkey. for roasting I wouldn't do it any other way.

I call it stuffing, even though its not in the bird. I use the carcass for a stock that I will start Tday night and if the stuffing has been in the bird it gets a bit funky. instead, I put aromatics in the cavity.

Pretty basic: cubed bread, mirepoix, egg, broth, thyme, sage, apple, mushroom, salt/pepper. This year I am also going to make a special cornbread version with pulled pork and roasted Hatch green chiles that I got this past September.

While tasty, stuffing the bird increases cooking time which also is a cause of dry breast meat. Plus it can be dangerous if the mixture in the back of the cavity doesn't get cooked fully.
