Since we did bread today try the best muffins ever. Yeah, mayonnaise, not kidding. I promise they are the awesome.


2 ripe bananas, mashed
1 c mayonnaise
1 tsp. Vanilla
2 c all-purpose flour
1 c. white sugar
2 tsp. Baking powder
1 tsp. Baking soda
½ c. walnuts


Mix bananas, mayonnaise and vanilla; add dry mixture, blending until moistened. Put into 12 large muffin tins. Bake at 350 degrees for 15-20 minutes.

Since Mayonnaise is made with eggs, probably saves that ingredient and adds some nice flavor :wink:

Actually Its adding the fat to the recipe more then anything else. Some of mayos out there don't have egg products and just use emulsifers.
