2 Cups Unbleached All Purpose Flour
3/4 Cup Sugar
3/4 Teaspoon Baking Soda
1/2 Teaspoon Table Salt
3 Very Ripe Bananas Mashed well Approximately 1 1/2 Cups (Ripe Bananas are sweeter and have more moisture)
1/4 Cup Plain Yogurt (the Yogurt adds moisture and a nice tang)
2 Large Eggs Beaten lightly
6 Tablespoons Unsalted Butter Melted and cooled
1 Teaspoon Vanilla Extract

Make sure oven rack is in the lower middle position. Preheat oven to 350 degrees. Grease and flour bottom and sides of your Loaf Pan. Sometimes I use one large Loaf Pan and other times I like to use 3 mini pans and make mini loafs. Combine the first 4 ingredients together in a large bowl and set aside.

Mix mashed bananas, Yogurt, Eggs, Butter and Vanilla with a in a medium bowl. Lightly fold the banana mixture into the dry ingredients, with a spatula, until just combined. The batter should look thick and chunky. Do not over mix. Scrape the batter your pan or pans. Bake until golden brown and a toothpick inserted into the center comes out clean. This should be about 55 minutes. Cool in pan for 5 minutes, then remove from pan and cool on wire racks to finish cooling.
Serve. I like mine for breakfast with butter. :D

Some people (most :D ) like Walnuts in their Banana Bread. If so add 1 1/4 Cups Toasted and Coarsely Chopped Walnuts. Add them to the dry ingredients at the beginning.

Remember to make sure the Bananas are real ripe. You want them to be soft and very speckled.

I didn't try your recipe(didn't have any yogurt), but have something you can try to your existing one.

Yesterday made a recipe from Cooking Illustrated. One major change was to take the bananas and put in a microwave safe container. Poke some holes in the top.
Microwave for about 5 mins to release the water. Strain for 15 min. moving around every once in a while.
Take the liquid and reduce by around 1/3.
Then reincorporate it to the mixture. This is supposed to increase the Banana flavor.

It worked well for the one I just did.

they do add one thing for decoration. Bananas sliced on top in 2 rows down the pan.. sprinkled with sugar.
