Hello, my name is Douche Lord (not really) (but yeah really) and I like fried rice.
The only thing I ever cook seriously is fried rice, so I thought it'd be a good idea to share and maybe hear your suggestions!
I make mine with jasmine flavored rice, preferably cold from the fridge (cooked a couple hours before) when possible, making a good F-R out of just-cooked rice is a bit more complicated (it gets soggy, mainly)
I'm not very good with oils so it's either olive oil for me or I just buy one of those pre-made "wok oil" with garlic flavors and stuff, it's usually canola oil, if I'm not mistaken. (and they both do the job)
Salt and pepper (about 2 pinches of each)(the soy sauce makes it very salty so I don't want to go overboard!)
I like to add green peppers, onions, green onions, coriander, garlic (gotta chop all of these real small so picky people eat it all!)
Any meat I have in the fridge, obviously not any kind of cold and ready to eat meat for sandwiches since those aren't always good for it, although sliced ham will do the job, or turkey.
I usually buy chicken breast or any kind of beef or steak that's on sale (all you have to do is cook it properly and even the "cheapest" meat will make a good addition to your fried rice.
One egg (for 2 BIG *SS BOWLS) and 2 eggs if it's for 3-4 plates.
I won't go in detail on how to add the egg to it, but feel free to ask.
Okay okay, that rice wouldn't be good without any kind of sauce right?
I use a mixture of soy sauce (any kind, I have no preference.) and Mexican hot sauce, not the very very spicy kind that you have to use in small amounts, think of something easier on the taste buds but not TOO light, but if light sauce is all I have, I do add a little (VERY LITTLE lol) Tabasco to it ;)
-Also, I never just drop it in there, I mix it in a small bowl, and when everything is in the wok I drop it in a hole I dig through the rice, so the sauce gets hot and almost instantly start mixing it (it'll catch some of any oil flavor, broth or anything that's already at the bottom the pan for EXTRA FLAVOOORR)
Once everything is cooked and mixed I simply remove from heat and serve!
So that's it, I'm a bit obnoxious when it comes to food so excuse the looong post.. well..
TL;DR FRIED RICE IS GOOD! I PUT MEAT AND VEGETABLES IN IT OM NOM NOM NOM.
(DISCLAIMER; even though my signature shows a japanese comedian, even though I'm talking about fried rice, I am not a weeaboo, an otaku or asian)(though I am not insulting those 3 titles at all, simply avoiding confusion lol)
