This isn't necessarily a recipe thread. But more of a chat/help thread. But if anybody does have any different kind of fillings they want to post please do so.

So, Dr Camp, what issues are you having with your rice? What is your current cooking method?

I always soak-rinse the Jasmine rice til its much less cloudy water. Then just go by directions on rice bag. I don't think its as "loose" as it should be, but I don't want to over use the vinegar. I prefer pretty spicy stuff so its often a roll of crab or shrimp with spicy mayo I do. Its been a while, saw yur comment and made me wanna get more going. Thanks J.-- Camp

Lazy mans sushi- Get some rice, avocado and some wasabi and stir it up. There ya go! lol. I cant cook rice very well, always seems too hard or too soft.

First off it's probably best not to use Jasmine Rice. This is a Thai long grain rice. To make sushi you need short grain rice. This rice has a characteristic that you need. It's very sticky. The brand i buy is Yutaka by Tazakifoods.

When cooking Sushi rice i use a 1:1.25 ratio of rice:water. You guys in the US use different measurements to us even when we're not using grams etc. But you can still use cups or any measurement the same way. So 1 cup of rice boiled in 1 1/4 cups of water.

When making Sushi for myself i find that 125g (UK 4ounce) of rice is enough to make a decent sized Futomaki or a few Nigiris. When cooking this quantity of rice i add the rice to 170ml (US 5.7fl ounce apparently) of cold water after washing thoroughly. Bring it to the boil, cover, and lower the heat to simmer. Simmer for 10mins then turn off the hob. Now leave the rice to stand for another 10mins. Remember, at no point should you remove the saucepan lid once you covered the pan after bringing the water to boiling point. You need all the steam in the pan. Your rice is now done. :2thumbs:

Favourite sushi to make at the moment for me is,

Tuna Mayo Hosomaki
Tuna Mayo, yellow pepper Futomaki
White crab flakes, mayo, cucumber Futomaki
Coronation chicken Cali Roll
Prawn Nigiri
Egg Omlete, chive Nigiri

Sushi Seasoning.

For the amount of rice i made above i use this amount of seasoning.

3 1/2 Tbs Rice Vinegar (i use Mizkan)
2 Tsp white sugar
1/2 Tsp salt

Put all that in a small saucepan and heat over a medium high heat until the salt and sugar it fully disolved. Do not allow it to boil. In fact you shouldn't even get close to boiling it. :D Put to the side and allow to cool back to room temp.

I find these quantities give a good full flavour to the rice. However seasoning is a matter of preference. You can use any amount of it that you want so it's best to maybe use half, fold into the rice, taste, then add more if need be.

Note, sushi rice is supposed to taste quite "vinegary".I also presume that US Tbs and Tsp are the same sizes as the UK. If not this shouldn't matter too much. You 'll just end up with a little more or less seasoning.

Not the best Sushi i've made. It was quite a rush as i was running about an hour later than i should have been. :(

To top it off as i powered my camera on i was greeted with the 'battery pack needs recharging' message. Had to give it a quick 3min charge for this photo lol.

Red pepper Hosomaki and White crab and cucumber cali roll /w slightly toasted sesame seeds. Not too bad for my 3rd attempt ever at making sushi. :)

The recipe is fine, but i had to rush the making of them a little. Rolling wasn't quite as good especially for the Cali Roll. I also forgot to add the sesame seeds to the rice before rolling the nori and had to add it afterwards which isn't a problem just not how i prefer to do it.

Good to hear.

Ps i don't like that guys rolling technique in the youtube video. You're supposed to roll it with the bamboo matt. Not just round it off at the end.

As much as I would love to try/make my own, lets just say the quality around here is not the greatest. For ANY of the ingredients. Now, on the other hand, if I could figure out how to use potatoes, I'd be in business.. lol

that is not sushi.

as far as cooking rice goes. buy a rice cooker, the best $20 cooking tool you'll ever buy.

I much prefer shashimi and nagiri or maki sushi. IMO california rolls are for fish haters. not intending to insult any one. but, if there is no raw fish, I'm not interested.

which leads me to why I don't make sushi. I can't easily get the quality of fish that my fave places get. sushi without very fresh fish is a waste.

They're actually for seaweed haters. That's why it's rolled on the inside so it's not the first thing a person will bite into. :D

Sushi isn't all about raw fish, even though having some nice smoked salmon on a nigiri is delicious. Sushi means sour rice.

+1 to the rice cooker. It does make things easier. Hope to invest in one soon. :D

Rice Cookers are wonderful. Living in a small town in South Georgia makes it difficult to get really fresh fish for Sushi. :sad:

I hope you didn't get the idea that I think sushi is only about raw fish.(I'm well aware of the literal interpretation of the word) however, my first twenty or more sushi experiences were at fairly high end restaurants and it was always nagiri or maki. in those restaurants the chef would have asked you to leave if you asked for something with avocado :D the only cooked seafood items I eat are eel and soft shell crab.

btw, do you know the history of the CR? it was first made by interned Japanese in California during WW2. not having access to there normal ingredients(no seaweed or quality raw fish) they improvised with what they had.

do you dislike raw fish Juneau?

I got the idea that you felt sushi had to use raw fish for it to be any good which isn't the case imo.

Nope i like raw fish with my sushi, but I like westernised sushi also. It all depends on how i feel and how much i'm willing to spend at that moment. :)

The best sushi i've had was at a place called Tokio Joe. It's not high end but damn was it good. Hope to go back there very soon.

I have to share a Sushi platter I made up. It was for a cookout so it was just a spinoff really. I make a pretty good pulled pork so it got me thinking.
So with some sushi rice, nori, and rice wine vin. and a little sugar for my usual rice, I added some pulled pork with bbq sauce( a little) and I baked some bacon on a rack with brown sugar till crispy. Broke the bacon to small pieces added to roll and cut up. Made a mayo-bbq sauce, put in a squeeze bottle for a small spiral on top then added a few jalepeno pieces on top of that. Sorry but forgot to get some pics. but I'll do it again and change it up a bit then get some pics. YUM YUM

That sounds brilliant and definitely not the 'norm'. Would love to see some pics if you do it again. :D
