I will be baking Pumpkin Pies tonight.
If you hate dense pumpkin Pie try these. The secret is to separate the eggs, beat the whites and fold them into the Pumpkin mixture.
You can use any pie crust recipe you like or buy one.
This is for a 9 inch pie
3 eggs separated
16 oz can of pure pumpkin
1 cup Evaporated Milk
1 cup of sugar
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon cloves
1/4 teaspoon salt
Preheat oven to 375 degrees
Beat egg whites, at high speed in a small bowl until soft peaks form.
In large bowl, at low speed, beat together egg yolks, pumpkin and the rest of the ingredients.
Use a wire whisk to gently fold in the egg whites.
Pour in pie shell and bake 45 minutes until the filling is set and a knife comes out clean. Cool on a wire rack and refrigerate.
