Any good turkey-day "dressing" recipes?

Not necessarily a stuffing recipe, but more of the side dish variety which tends to have a different consistency. Preferably a southern style as opposed to something like an Oyster Dressing.

Dunno about the side stuff, but I've been 5 years without my mama's dressing on turkey day. Man I'm lookin forward to that in the worst way.

I also told my wife to have her butt in the kitchen and learn how its done like mama.

I use the same basic cornbread stuffing that I stuff the bird with but I cook it in a side dish which tends to make the top crispy so when you fluff it with a fork there are crispy parts throughout.
