Ok, this first one, you CAN'T say yuck until you've tried it. I know it sounds bad but it's not. My Grandma always makes this for everyone and we never tell the kids until after they've ate it. Yes, the older ones have caught on but they do not care, they love it.
Sauerkraut Cake
2/3 C butter
3 eggs
1 1/2 C sugar
1 tsp vanilla
1/2 C cocoa
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 1/4 C flour
2/3 C sauerkraut
1 C water
Cream butter and sugar till fluffy. Beat in eggs, one at a time. Add vanilla, flour, cocoa, baking powder, baking soda, slat and water. Beat for two minutes with hand held mixer. Add sauerkraut, stir until well mixed. Pour batter into greased 8x10 cake pan. Bake at 350 for 30 min.
Now you can't have the cake w/out the frosting. This recipe makes A LOT. So you could half it or save it for later. My Grandma always uses it all. She always has the biggest piece and then covers it w/ cool whip. She weighs about 90 pounds soaking wet.
It's a butter cream frosting. The cake is better w/ chocolate frosting so she just adds chocolate to this.
6 C powdered sugar
3/4 C butter or butter flavored shortening
3 TBS water
1 1/2 tsp vanilla
For chocolate:
Add about 1/2 bag melted chocolate chips or
1/2 C cocoa
Beat all ingredients on medium speed until smooth.
This one was my Grandpa's favorite. My Grandma made it for my kids for the first time a few months ago since my Grandpa passed away. My kids are now obsessed w/ it.
Lemon Lush:
1 C margarine
1 C flour
1- 8 oz cream cheese (I use 2)
1 C powdered sugar
2 C cool whip
2 large packages instant lemon pudding
3 C milk
1 C chopped walnuts
Mix together margarine and flour. Press mixture into 9x13 cake pan. Bake 15 minutes at 350. Let crust cool. Mix cream cheese, powder sugar, and 1- C cool whip. Spread over cooled crust. Combine instant lemon pudding and milk, mixing until pudding consistency. Spread over top of coo whip mixture. Top with 1 C cool whip and chopped nuts. Refrigerate until firm. Cut into squares.
Wendy's chili:
I think my Grandma got this from my Uncle. IMO, it don't taste like Wendy's chili, it's 10x's better. I personally am not a chili fan but I love this one. It's way good but it's also way easy. There's also many things you can add to it.
2 LBS ground beef
1 can french onion soup
1 TBS chili powder
1 TBS cumin
1/2 tsp pepper
1 Can 21oz kidney beans, undrained
6oz can tomato paste
8oz can tomato sauce
Tabasco sauce to taste
Brown ground beef and drain off excess oil. Add the rest of the ingredients. Bring mixture to a boil. Lower heat and simmer for 30-40 min.
The recipe actually shows to use a french onion soup powder packet but I always buy the can of soup. I can't say I've ever tried it with a packet. I don't think the taste would be much different though.
